Gingered Zucchini Soup

Creamy and delicious, this is a sure way to use all your bountiful zucchini and enjoy every bite!
Ingredients
| 1 | onion (sliced) | |
| 3 | clv | garlic (minced) |
| 1 | T | fresh ginger (grated) |
| 5 | zucchini (sliced) | |
| 1⁄2 | c | cashews |
| 1 | T | butter |
| 2 | c | water |
Instructions
Sauté the onions, garlic and ginger in butter. When tender, add zucchini and continue to cook on med-hi heat. Add salt and pepper to taste.
Meanwhile, blend the cashews and water in a blender until smooth and creamy. Add the cashew cream to the soup, then puree everything.
Get ready to eat something delicious!
